PREHEAT oven to 425° F.

ADD pepper, zucchini, onion, olive oil, salt and pepper onto a large sheet pan. Toss until ingredients are well combined, then roast for 10 minutes and remove.

PREPARE ravioli according to package directions, reserving 1/4 cup pasta water, then drain.

HEAT butter in a medium skillet. Add garlic, and sauté for 1 minute or until slightly browned. Add roasted vegetables and reserved pasta water, and mix.

SIMMER for 2 minutes; season with salt and pepper. Pour over cooked ravioli, top with parmesan, and toss.
