Method

SLICE rolls in half and broil until slightly brown.

TOP the bottom half of the roll with mozzarella, divided equally between the 4 bottom buns, and broil until melted.

TOSS arugula with olive oil and sprinkle with salt and pepper; set aside.

COOK all 4 eggs sunny side up.

PLACE bottom buns on plate and top each with 2 tablespoons of pesto. Then add the egg and top of bun.

SERVE with tossed arugula.
