WASH broccolini and pat dry. Trim any thicker stalks.
HEAT a large skillet over medium-high heat until hot, about 2-3 minutes.
ADD olive oil and broccolini to the skillet. Allow the florets 1 minute to sear in the pan and get charred before moving them around to coat in the olive oil for an even sear.
CONTINUE to pan fry for another 2 minutes. If needed, add an extra drizzle of olive oil to avoid excessive charring.
ADD water and steam broccolini until the water is almost evaporated. Season with salt and pepper.
STEAM broccolini for 1 extra minute and remove from heat.
TOP with pesto and a sprinkle of parmesan cheese. Enjoy!
