Method

PREHEAT oven to 400° F. Pierce potatoes all over with a fork or knife and tightly wrap each individually in foil. Bake until soft, about 50 minutes.

UNWRAP potatoes and cut lengthwise slits in the top of each.

TOP each potato with 2 heaping spoonfuls of pesto, bacon bits, and shredded parmesan cheese. Season with salt and pepper.

RETURN potatoes to the oven for 5 minutes and remove.

ADD additional parmesan cheese, if desired. Serve and enjoy!
