Basil Pesto Salmon Skewers


Sure to become a new favorite for barbecues or group gatherings, this quick-and-easy recipe adds a ton of flavor to salmon brushed in an herbaceous pesto sauce.

  • 2 pounds skinless, boneless salmon filets, cut into 1-inch cubes
  • 2 lemons, cut into thinly sliced rings
  • 1 container BUITONI Refrigerated Pesto with Basil (7 oz.)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • Cooking spray
  • 3 sprigs of rosemary
  • 3 sprigs of fresh thyme


HEAT grill to medium.

THREAD salmon and lemon slices onto 16 metal skewers, alternating between the fish and lemon.

BRUSH each skewer with pesto and sprinkle with salt, pepper, and garlic powder.

ARRANGE skewers on a grill rack coated with cooking spray; grill 1 minute on each side or until desired degree of doneness.

REMOVE from grill and place on serving dish.

SERVE with remaining pesto on the side and garnish with rosemary, thyme and remaining lemon wedges.
