Creamy Tomato Tortellini Soup
Sweet and savory, this tortellini soup is the perfect medley of nostalgic flavors for any day and any occasion.
Ingredients
- 1 Tbsp olive oil
- 1/2 white onion, diced
- 6 cloves garlic, minced
- 1 lb ground Italian sausage
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 14.5 oz crushed fire roasted tomatoes
- 4 cups beef broth
- 1/2 cup heavy cream
- 1 Package BUITONI Five Cheese Tortellini (20 oz.)
- 1/4 cup chopped fresh basil
- BUITONI Shredded Parmesan Cheese (5 oz.) for serving
Method
HEAT olive oil on medium high heat. Add onions and sauté for about 3 minutes. Add the garlic and stir for about 30 seconds.
ADD ground sausage, Italian seasoning and red pepper flakes. Mix well and cook until sausage is cooked through.
ADD crushed tomatoes, beef broth and heavy cream. Bring to a boil then add in the tortellini.
LOWER heat and boil gently for 7 minutes. Add the basil.
TOP with shredded parmesan for serving.
