COOK chicken breast in a 12-inch sauté pan, then cool and slice.
BLANCH broccolini for 2 minutes and cool.
BOIL tortellini for 4 minutes; reserve 1/4 cup of cooking water while draining.
ADD pasta water to cream; whisk in one package of Boursin Cheese and simmer on low for 1 minute.
COMBINE chicken, broccolini, pasta and tomatoes; toss with sauce and season with salt to taste.
GARNISH with remaining package of Boursin Cheese.
