BLT & Avocado Tortellini Salad


This quick, family-style tortellini salad is refreshing and perfect for a picnic.

BLT & Avocado Tortellini Salad

  • 1 package BUITONI Refrigerated Three Cheese Tortellini (20 oz.)
  • 1/3 cup red wine vinegar
  • 2 teaspoons fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Pinch of sugar
  • 1 avocado
  • 1 cup cherry tomatoes
  • 8 strips bacon, cooked and chopped
  • 2 cups spinach
  • Fresh black pepper


COOK tortellini according to instructions; drain and set aside.

MAKE the vinaigrette. Mix red wine vinegar, lemon juice, olive oil, salt, pepper and sugar in bowl. Add to cooked tortellini and toss to coat.

DICE avocado and slice tomatoes in half.

ADD avocado, tomatoes, bacon and spinach to pasta.

TOP with fresh black pepper, if desired.
