Warm Antipasto Salad
Whip up this delicious, no-stress side dish in just 10 minutes!
Ingredients
- 1 package BUITONI Refrigerated Mixed Cheese Tortellini (20 oz.)
- 1 package BUITONI Refrigerated Pesto with Basil (7 oz.)
- 2-3 tablespoons olive oil
- 3/4 tablespoon apple cider vinegar
- 1/2 cup pepperoni, chopped
- 10 ounces cherry tomatoes, sliced in halves
- 8 ounces mozzarella pearls
- 1 cup marinated artichoke hearts, quartered
- Salt & black pepper to taste
Method
PREPARE tortellini according to package directions. Drain and place in a large mixing bowl.
WHISK pesto with olive oil and vinegar; set aside.
ADD pepperoni, cherry tomatoes, mozzarella and artichokes into the mixing bowl.
ADD pesto vinaigrette and toss. Season with salt and pepper to serve.
