5 Cheese Mini Calzones with Meat Sauce

Ingredients

  • 1/2 cup ricotta cheese
  • 1 cup mozzarella, shredded
  • 1 tablespoon Romano cheese, grated
  • 3 tablespoons Parmesan, grated
  • 2 tablespoons Asiago, grated
  • 1 tablespoon fresh parsley, chopped
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 package pizza or pie dough
  • 1 package pepperoni, thinly sliced
  • Nonstick cooking spray
  • 1 container BUITONI Refrigerated Meat Sauce (15 oz.)

Method

PREHEAT oven to 375° F.

MIX all cheeses, parsley, egg, salt and pepper in a bowl; reserve a tablespoon of egg to brush on top of calzones before baking.

REMOVE dough from package, unroll and lay on a floured cutting board. Roll out to approximately 1/8” thick.

USING a 4” round mold (wide mouth coffee cup, ramekin or small bowl), cut 12 discs of dough.

PUT approximately 3/4 tablespoon of filling in the center of each disc of dough; add one layer of pepperoni; fold both sides of dough inward over filling and pinch together to seal the edge of the calzone.

PLACE calzones on a cookie sheet, sprayed with nonstick cooking spray and brush the top of each with the remaining beaten egg.

BAKE for 13-15 minutes.

SERVE with warmed meat sauce for dipping.

Cook’s Tip: Other additions to filling can be spinach, beef, sausage, sun-dried tomatoes, olives or basil.
